Ingredients
- 4 large eggs
- 1½ cups sugar
- 1 teaspoon vanilla essence
- 1½ cups flour
- Pinch of salt
- 2 teaspoons baking powder
- 1 cup boiling water
- 2 tablespoons coffee (the contributor used ¼ cup machine-ground coffee)
- 155 ml oil (½ cup plus 2 tablespoons)
- Optional untested icing:
- 125 g butter
- 1½ icing sugar (unit not specified in the original recipe)
- 1 tablespoon boiling water
- 1 tablespoon milk
- 2 heaped teaspoons coffee
- 2 heaped teaspoons hot chocolate powder
Method
- Beat the eggs with the sugar and vanilla essence.
- Sift in the flour and salt, then fold in.
- Sift the baking powder over the mixture. Do not mix it in yet.
- Separately combine the boiling water, coffee and oil.
- Pour the hot coffee mixture over the baking powder; it will fizz. Fold it into the batter.
- Divide the batter among small baking cups or moulds, filling each about one-quarter full.
- Bake at 180°C for 15–20 minutes. This timing is for approximately 20 small cakes.
- Allow the cakes to cool before decorating.
